Beef Tacos

Ingredients (Serves 4)

  • 500g minced beef

  • 1 tbsp oil

  • 1 onion, finely chopped

  • 2 cloves of fresh garlic

  • 1/4 tsp chilli powder

  • 1 tsp ground paprika

  • 1 tsp cumin

  • 1 tsp ground coriander

  • 1/2 tsp dried oregano

  • 2 tbsp tomato paste

  • 3-4 tbsp water


  1. Heat oil in a non-stick frypan. Add the onion and cook until soft, not browned.

  2. Add garlic and fry a further minute, then add remaining herbs and spices. Cook over low heat for 3-4 minutes.

  3. Increase heat, add mince beef and cook until browned. Add water and cook for 5-10 minutes stirring continuously.

  4. If mixture starts to stick, add a little more water. The mixture should be quite dry when finished.

To Serve

  1. Take whole letter leaves and place spoonfuls of meat into the leaves.

  2. Top with chopped tomato, grated cheese, avocado slices, sour cream and a tsp of commercial taco sauce.
