Vegetable Quiche Cups

Ingredients (Serves 6)

  • 250g chopped spinach

  • 3 eggs

  • 100g low fat tasty cheese

  • 100g chopped green capsicum

  • 50g chopped onion

  • 3 drops of Tobasco sauce


  1. Microwave the spinach for 2 minutes. Drain excess liquid.

  2. Line muffin tins with baking cases.

  3. Combine spinach, eggs, grated cheese, capsicum, onions and Tobasco sauce in a bowl.

  4. Divide into the muffin tins.

  5. Bake at 180 degrees for 20 minutes or until a knife inserted at the centre comes out clean. 

  6. Quiche cups can be frozen and reheated in the microwave.
