Vegetable Quiche Cups
Ingredients (Serves 6)

250g chopped spinach
-
3 eggs
-
100g low fat tasty cheese
-
100g chopped green capsicum
-
50g chopped onion
-
3 drops of Tobasco sauce
Method

Microwave the spinach for 2 minutes. Drain excess liquid.

Line muffin tins with baking cases.

Combine spinach, eggs, grated cheese, capsicum, onions and Tobasco sauce in a bowl.

Divide into the muffin tins.
-
Bake at 180 degrees for 20 minutes or until a knife inserted at the centre comes out clean.

Quiche cups can be frozen and reheated in the microwave.
