Pumpkin Lasagne

Ingredients (Serves 6)

  • 500g mince beef

  • 400g pumpkin, thinkly sliced

  • 400g tinned diced tomato

  • 1 1/2 cups grated tasty/mozzeralla cheese

  • 200g zucchini, thinly sliced

  • 100g red capsicum, diced

  • oregano

  • parsley

  • garlic

  • olive oil

Method 

  1. Fry mince in a little olive oil until browned, then add herbs, onion and capsicum and fry until tender.

  2. Add tomatoes and simmer until thick.

  3. In a greased lasagna dish, place a layer of pumpkin slices and cover with half of the mince mixture.

  4. Place over a layer of zucchini and add 1/2 cup of cheese.

  5. Cover with remaining mince mixture. 

  6. Cover with pumpkin slices and remaining cheese.

  7. Bake in oven for 40 minutes at 180 degrees.
