Pumpkin Lasagne

Ingredients (Serves 6)

500g mince beef
-
400g pumpkin, thinkly sliced

400g tinned diced tomato

1 1/2 cups grated tasty/mozzeralla cheese

200g zucchini, thinly sliced
-
100g red capsicum, diced
-
oregano
-
parsley
-
garlic
-
olive oil
Method
-
Fry mince in a little olive oil until browned, then add herbs, onion and capsicum and fry until tender.

Add tomatoes and simmer until thick.

In a greased lasagna dish, place a layer of pumpkin slices and cover with half of the mince mixture.

Place over a layer of zucchini and add 1/2 cup of cheese.

Cover with remaining mince mixture.

Cover with pumpkin slices and remaining cheese.

Bake in oven for 40 minutes at 180 degrees.
